harvest
Mid-October, when the olives are just beginning to ripen. Out of respect for the olive tree and to ensure quality, the farmers collect by hand in so-called "ordeño" baskets.
processing
The freshly harvested olives go straight to the oil mill. Through a strict processing process, you get cold-pressed organic olive oil "extra virgin" from the first pressing.
origin
The olive trees and the oil mill are located in a national park 850m above sea level. Sea level in Valencia, Spain. The climate here is continental with influence of Mediterranean climate. A calcareous and permeable soil favors the cultivation of olive trees and the quality of the oil.

Gonzalo Pin is the "Maestro" of the oil mill and responsible for the production of Finca Oli Oli. The "Kingdom of Cornicabra" here has an unimaginable dimension of complexity and harmony.
Its fruity side is defined by vegetal leaf notes. You can imagine its flavors as if they were a class of schoolchildren waiting for recess on a rainy day. First the intensity of the green tomato rushes through, then the artichoke emerges, followed by green asparagus and some arugula. Finally, timidly seated notes of herbs.
Once the door is opened, one notices the Mediterranean tenderness of a light sweetness followed by a bitterness, a characteristic bitterness that is the sign of the highest quality, with a freshness that surrounds you like a spring rain, followed by a spicy middle.
The impression is lasting and since you can't stop tasting it, you can also feel a complexity of herbs with dried fruits retronasally.
FittingAt first glance, fried dishes and hearty stews come to mind. It adds personality to soups and mashed potatoes. Also ideal with pumpkin dishes or any roasted vegetables.
