The capital Bogotá is located in the Cundinamarca region at 2625m. This is too high for most coffees, so the growing areas are a little lower. There is also this blend of two of the better known varieties Castillo and Caturra. In contrast to mass production, the processing takes more time and the coffee churches are fermented for 24 hours, after which the coffee is washed and fermented again for 24 hours in a brew of water and pulp. This process gives this coffee more complexity without making it too sour. Ideal for discerning connoisseurs of espresso-based drinks.
