Miguel and Felipe Hoyos have completely dedicated themselves to specialty coffee with their Finca Pisamo. In addition to the Oro Negro, which stands for our more classic espresso, they have created very exciting coffees with controlled anaerobic fermentation. Azul Seco uses anaerobic fermentation using CO2 and the coffee is dried after 120 hours and fermented again together with the must. At first the taste is reminiscent of an aromatic Earl Gray with rooibos - but with a full mouth. Aromatic notes such as blueberry and cranberry are clearly noticeable here.
