Tabi Colombia is a variety similar to Caturra. It has a rather sweet taste and produces more fruit, which is why it is particularly suitable for small farms and creative productions. Tabi means "good" to the Guambiano (Colombian tribe), and comes from Typica and Bourbon and offers a very fruity cup. Our "Mandarina" is processed using the complex honey process, in which the coffee is dried without the peel but with the pulp for 3 weeks, turning frequently. This is followed by a controlled fermentation without air supply (anaerobic) over 160 hours. This harmonizes perfectly with the properties of the coffee bean and gives you a unique tangerine aroma.
